If you're interested in learning more about image segmentation, here are some papers that I've found helpful over the years. This list is too short to cover the wide range of segmentation methods that exist, but these are papers that I've drawn on.

Current methods in medical image segmentation. D. L. Pham, C. Xu, and J. L. Prince. Annual review of biomedical engineering (2000).
This review paper provides an excellent overview of image segmentation techniques. While it doesn't include some newer methods (the paper is from 2000) such as multi-atlas segmentation, most of the fundamentals described in the paper are still relevant today.

This review paper goes into more detail on shape models for image segmentation.

This paper provides a model and clear explanation for multi-atlas segmentation methods.
