Quiche Provencal

Ingredients

Saute the garlic and onion with the olive oil till they are tender and golden, about 8 minutes. Add the vegetables( except the tomatoes and olives) to the pan and cook, covered, for about 30 minutes, on low heat.Add the tomatoes and olives towards the end of cooking.

Gently beat the eggs and add the cream and milk and seasonings. Blend well. Place vegetables in bottom of pastry shell then add the egg mixture and finally lightly layer the top with the cheese. Bake for about 35 minutes at 350*(176*C) on the center rack of oven. Bake until a knife dipped into middle comes out clean. Remove and let cool for 15 minutes to let it set. Garnish with parsley or more cheese.
