Indian Style Kale with Yogurt Sauce 1 bunch of kale, cut into one inch strips 1 large or 2 small russet potatoes 1 T chopped parsley 1 T chopped fresh ginger 1 T chopped fresh garlic 1/2 tsp turmeric 1-2 T oil water as needed salt to taste Yogurt Sauce 1 cup yogurt 1/4 cup lemon juice 1 tsp chopped garlic pinch of cayenne - Place the kale in a large skillet with only the water adhering from the last rinsing. Cook at medium high just until they wilt. Remove from heat and stir a few times, then add oil, garlic, ginger and turmeric. Turn heat down to medium, cover and cook for 10 minutes. - Mix all the yogurt sauce ingredients together in a separate bowl. - Add potatoes and stir to coat, adding water if needed. Turn heat down to low, cover and cook for 30 minutes. Mix all the yogurt sauce ingredients together Serve with yogurt sauce.
